- 1/2 cup peanut butter (smooth or crunchy)
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup graham cracker crumbs
- 1 cup chocolate chips (for coating, optional)
- 1 teaspoon coconut oil (if melting chocolate for coating, optional)
Instructions
- In a mixing bowl, beat cream cheese, peanut butter, powdered sugar, and vanilla extract until smooth and well combined.
- Stir in graham cracker crumbs until fully incorporated.
- Roll the mixture into small balls (about 1 inch in diameter) and place them on a parchment-lined baking sheet.
- Refrigerate for at least 30 minutes to firm up.
- If coating in chocolate, melt chocolate chips with coconut oil in the microwave in 30-second intervals, stirring in between.
- Dip each ball into the melted chocolate, then place them back on the parchment-lined sheet.
- Refrigerate for another 20 minutes until the chocolate is set.
- Serve chilled and enjoy!
